Bread Meat Cheese work as consultant chefs to Wild Deer Management, developing recipes for their excellent venison box delivery operation.  You will find our recipe cards in each box.  With some recipes we also recommend serving suggestions with particular accompaniments as detailed below.


Carne Asado Taco:
Pico de Gallo
2 large tomatoes chopped
½  white onion chopped
Lime juice to taste
Maldon salt
Fresh coriander chopped
Method: Mix together adding salt, lime juice and coriander just before serving.

Burnt spring onion crema
2 bunches of spring onions, cleaned and trimmed
100g soured cream
2 tablespoons of mayonnaise
Method: Grill spring onions on an oiled griddle pan until blackened.  Retain 4 whole for garnish & blitz the remainder with the soured cream and mayo.

Salsa Verde
15g blanched almonds
1 bunch of flat leaf parsley
Handful of rocket
1 fat garlic clove peeled
60-120ml of extra virgin olive oil
Juice of 1 lime
Pinch of sugar
Maldon salt & freshly ground black pepper
Method: Toast almonds in a dry pan until lightly golden.  Blitz the nuts, parsley, rocket, garlic & oil to a thick puree.  Add lime juice & sugar, stir and season well.

Venison loin:
Spiced Conference Pear
1tsp ground cinnamon
¼tsp ground cumin
½ tsp grated nutmeg
¼ tsp five spice powder
2 Conference pears
65g unsalted butter
Method: Peel pears, core and slice into eighths.  Coat pears in spices, cook in butter over a medium heat until golden & tender.

Celeriac Puree
½ large celeriac peeled & chopped
60ml full fat milk
60ml water
40g unsalted butter
Maldon salt & freshly ground white pepper
Method: Put chopped celeriac in a large pan with milk & water, cook until soft.  Drain & puree until smooth.  Place in a clean pan over a low heat & cook until thick, beat in butter & season.

12 Brussel sprouts, trimmed & halved
15g unsalted butter
¼tsp Maldon salt
25ml vegetable stock
Pinch of Szechuan pepper
Method: Heat butter in pan, add sprouts & season with salt, cook for 2-3 minutes until gently golden.  Add stock & cook until tender then add Szechuan pepper.
